The difference between a large scoop and a small scoop is just the width of the scoop. A large scoop is about 5.5" wide, so you would need to make sure you have enough room between the partitions of your pan that this scoop will fit. If not, you will want a large scoop. Many of the "old timers" used the scoop to tell when the syrup was done just by watching how it would "sheet" when coming off the scoop.
