The difference between a large scoop and a small scoop is just the width of the scoop. A large scoop is about 5.5" wide, but this small scoop is only about 3.5" wide. Depending on the space between the partitions in your syrup pan is how you decide which size scoop is best for yoru evaporator. Many of the "old timers" used the scoop to tell when the syrup was done just by watching how it would "sheet" when coming off the scoop.
